Oysters Lobster Coquilles

 

Oysters
The Zeeuwse Flat Oysters (Ostrea Edulis) are being grown at our own sheltered patches in the clean waters of Lake Grevelingen . The season lasts from September till mid-May. The Flat Oyster is an exclusive product because it is rare, grows much more slowly and reproduces itself not as easily as the Zeeuwse Oyster (Crassostrea Gigas).

The Zeeuwse Oysters (Crassostrea Gigas) on the other hand are abundantly available and are being grown on special and sheltered places in the pure clean waters from the Oosterscheldt and the Grevelingen-lake and are also available in the summer months. When the Oysters are ready for consumption, they are fished and are moved to our Oyster basins.  In these Oyster basins the Oysters can get a rest and clean themselves of sand and dirt.

Through the artificially changing tide, the Oysters learn to close and the abductor muscle is trained to hold its shell closed for a longer period of time. This enables the Oyster to be out of the water for a longer time, without losing its flavor and moisture.  Our Oysters are packed in traditional wooden baskets with seaweed in which the Oysters are kept moist and are protected from outside influences.
